Mexican Gastronomy is the result of the fusion of the culinary tradition of Mexican origin, before the colonial period, and the influences of European cuisines such as Spanish and French, or other latitudes such as Arabic. Each gastronomy contributed not only ingredients - such as chile, tomato, onion, oil - but utensils and processes that enriched the state's culinary offer, making this a rich and varied cuisine, considered one of the most baroque and Representative of Mexico.
The following Dishes are some the most traditional Dishes from Puebla, Mexico. Of course WE COOK DISHES FROM ALL MEXICAN COUNTRY.
In the 16th Century nuns from the Convent of Santa Rosa in Puebla de los Angeles, upon learning that the Archbishop was coming for a visit, went into a panic because they had nothing to serve him. The nuns started praying desperately and an angel came to inspire them. They began chopping and grinding and roasting, mixing different types of chiles together with spices, day-old bread, nuts, a little chocolate and approximately 20 other Mexican ingredients..
This concoction boiled for hours and was reduced to the thick, sweet, rich and fragrant mole sauce we know today. To serve in the mole, they killed the only meat they had, an old turkey, and the strange sauce was poured over it. The archbishop was more than happy with his banquet and the nuns saved face. Little did they know they were creating the Mexican National dish for holidays and feasts, and that today, millions of people worldwide have at least heard of mole poblano.

The history of this dish comes from two varieties of bread, which during the colonial era were tribute to the Spanish crown by the City of Puebla: salt cakes similar to the French pambazo that spread in the French military intervention against Mexico between 1863 -1867.
The Cemitas Poblanas offer variety in its main content. Once opened this bread is added: beans, white strips cheese(Queso Oaxaca), slices of tomato, onion, chipotle or rajas chiles and as desired the specialty; Can be milanesa, ham, meat enchilada, carnitas, etc.. At the end it is crowned with leaves of fresh Mexican farmed herb,(Papalo).

ANOTHER INTERESTING FUSION
TACO is a traditional Mexican dish composed of a corn or wheat tortilla folded or rolled around a filling. A Taco can be made with a variety of fillings, including beef, pork, chicken, seafood, vegetables and sometimes cheese, allowing for great versatility and variety. A taco is generally eaten without utensils and is often accompanied by garnishes such as :salsa or chili pepper, avocado or guacamole, cilantro (coriander), tomatoes, onions.
TACOS AL PASTOR (Fusion between Europe and Mexico)
Is a dish developed in Central Mexico, shawarma spit-grilled meat brought by the Lebanese immigrants to Mexico. Being derived from shawarma, it is also similar to the Turkish döner kebab and the Greek gyros. Although shawarma and döner are usually lamb-based (thus the "shepherd-style" name), gyros and Tacos al Pastor in Mexico are made of thin pork steaks seasoned with adobo seasoning, then skewered and overlapped on one another on a vertical rotisserie cooked and flame-broiled as it spins.
